Want a trick for guilt-free boxed mac & cheese? Stir in cooked quinoa and chopped steamed broccoli when serving (I always keep the Costco frozen version on hand). The sauce helps the quinoa stick, and for another protein boost, toss in some shredded rotisserie chicken or edamame!
On that note, we finally found a protein pasta the whole family enjoys. While it's best fresh, it also reheats well for leftovers. If the Costco version wasn't for you (IYKYK), definitely give this one a try!
